- An in-depth session on sustainable bar industry for graduates of its sustainable bar operation training program.

Pernod Ricard Korea, the Korean unit of the global wine and spirits company Pernod Ricard, announced that it held a special lecture to help build a sustainable bar culture.

The special lecture was offered on June 26 as part of the Bar World of Tomorrow training program that Pernod Ricard Korea has been providing since January 2022, inviting the graduates of the program.

Bar owners from three leading bars well known in Korea for practicing sustainability, Pine & Co, Bar Zest and Bar Cham joined as speakers. First, Mr. Du-ui Hong of Pine & Co. vividly described various attempts being made to practice sustainability in the market and related his personal perspectives. Mr. Demie Kim of Zest shared with participants his insights into pre- and post-sustainable bar operation and the importance of sustainability. Finally, Mr. Byung-jin Lim of Bar Cham offered a lecture on the driving force that can sustain the field of bartending and shared some real-world issues and solutions related to bar operations. He also imparted in-depth knowledge on the market for sourcing local ingredients.

In addition to its regular program, Pernod Ricard Korea offered an in-depth session known as the ‘T-Talk’ program to create a forum for ongoing in-depth discussions on sustainability in the bar industry. In November of last year, the company invited head bartender Odd Strandbakken of Charles H. at the Four Seasons Seoul to introduce a concept of sustainability that can be applied to the bar industry. He also passed along techniques to create sustainable syrups and garnishes using local produce and some cocktail recipes made with these ingredients.

Frantz Hotton, CEO of Pernod Ricard Korea commented, “It is important for all stakeholders to continuously share ideas and work to practice sustainability in order to establish a culture of sustainability in the hospitality industry. We hope that this special lecture marking its second edition can help build a more sustainable bar culture in Korea.”

The Bar World of Tomorrow is a professional training program offered by the Pernod Ricard Group to bartenders and bar owners around the world to help build a sustainable bar culture. The training has been conducted for bartenders and managers aged 19 or older working in bars, hotels, and restaurants. Since its launch in Korea in January 2022, a total of 385 bartenders and university students majoring in relevant studies have completed the program.
